The Easiest Approach: Naturally Gluten-Free First
Rather than replacing every bread, pasta, and cracker with a gluten-free version (often more expensive and lower in fiber), the simplest way to eat gluten-free is to build meals around foods that never contained gluten in the first place: meat, fish, eggs, dairy, vegetables, fruit, rice, potatoes, and legumes are all naturally gluten-free.
Where Gluten Hides
Gluten (found in wheat, barley, and rye) shows up in obvious places like bread and pasta โ but also in less obvious ones:
- Croutons, breadcrumbs, and battered/breaded foods
- Soy sauce (most traditional versions contain wheat โ look for tamari instead)
- Some salad dressings, sauces, and soup bases (used as a thickener)
- Beer and malt-based beverages
- Certain processed deli meats and imitation seafood
If you have celiac disease specifically, cross-contamination during food prep also matters โ that's a stricter standard than general gluten avoidance.

Reading Labels
- Look for a "certified gluten-free" label if you have celiac disease โ it guarantees testing below 20ppm gluten.
- "Wheat-free" is not the same as gluten-free โ barley and rye still contain gluten.
- When eating out, ask specifically about shared fryers, grills, and cross-contact if you have celiac disease.
If you suspect you have celiac disease or a gluten intolerance, get evaluated by a doctor before eliminating gluten โ testing typically requires gluten still be in your diet to be accurate.
